Do I need 120Hz for GTA 6?

Rockstar hasn't published frame-rate targets for every console mode. A 120Hz panel with HDMI 2.1 and VRR keeps your options open for any performance mode, and helps with other games too.

Check the HDMI 2.1 port count

Some TVs only have one or two full-bandwidth HDMI 2.1 ports. Plug your PS5 or Xbox into one of those, and check whether that port is shared with eARC for your soundbar.
